Our small yet exquisite gourmet restaurant

A feast for the eyes and the palate

Like fireworks, the versatile flavours burst on your palate. Gradually, the different notes of the gourmet creations come to the fore, unique in taste and presentation. Artfully arranged, they are reminiscent of works by great artists. The Gourmetstube 1897 has been enchanting guests from near and far with its exceptional and award-winning cuisine since 2017. The name is a tribute to the Quellenhof’s history and refers to the year in which it was founded. In the distant year 1897, the Quellenhof was a simple post station with an inn along Val Passiria/Passeiertal, which had not yet been developed for tourism.

Since 2017, the Gourmetstube 1897 has been taking guests on culinary journeys under the leadership of Chef Michael Mayr. He and his team are masters of their craft and transform fresh, high-quality ingredients into refined dishes that are an ode to (culinary) art. Herbs from the hotel’s own garden add a very special note. Much of the freshly caught fish is delivered daily from the local fish farm in St. Leonhard in Passeier. Your dining experience is rounded off with one of the 1,200 fine wines stored in the Quellenhof’s wine cellar. Sommelier and maître d’ Matteo Lattanzi will be happy to advise you on the various wines and serve you the right wine for every dish.

The philosophy is characterized by a harmonious interplay between "Back to the Roots" and a discovery of the multifaceted world of food. We place great value on local ingredients and maintain close partnerships with farmers and producers throughout South Tyrol. Our cuisine is distinguished by its seasonal, regional and sustainable focus. At the same time, we open our senses to the culinary treasures that the world has to offer. Our ultimate goal is to make the harmonious connection between our regional roots and the inspiring influences from around the world tangible to you.

Our menu "Psaier meets the World" is a tribute to the diversity and quality of products from our immediate surroundings as well as to the culinary treasures from around the world. Each dish tells a story shaped by a passion for local produce and curiosity about international cuisine. We believe that indulgence is more than just a taste - it's an experience for all the senses. That's why we place special emphasis on ensuring that the support of our local producers and culinary finesse are noticeable on every plate.

What Gault&Millau says about us

The menu at Gourmetstube 1897 took us around the world, starting in Normandy, continuing to Sicily, returning to South Tyrol, and finally ending in Spain for the main course and South America for dessert. A positive aspect worth mentioning – before the actual meal even begins – is the kitchen’s attention to the amuse bouches and the herbs that stimulate the appetite and aid digestion. But now to the menu: the Normandy salmon rested on a finely foamed sauce, to which the Granny Smith apple lent freshness and acidity and the mustard seeds a pleasant sharpness. The classic of the menu is the beetroot ravioli with Alpine cheese and liquorice, accompanied by a Miéral squab roasted to perfection: a complex yet harmonious dish that it is hard to imagine the menu without. Now in its fifth year, the kitchen team is growing more and more knowledgeable on how to offer a restaurant cuisine in its own right, in addition to the already superb hotel cuisine. The service staff is extremely attentive and courteous and knows exactly how to recommend the right wines from the wine list, which also includes some rarities.

Price

For both external guests and Quellenhof guests, a surcharge of between €125.00 and €155.00 will be charged, depending on the four-, five-, or six-course menu booked.

Cancellation

Please note that for organisational reasons, 80% of the menu price will be charged in the event of cancellation up to the day before the reservation. If the cancellation is made on the same day, the full amount will be charged.
